From 1824 to 1831 the State Department of Religious Affairs in France was hosting an event in the Hôtel de Fleury on 24 Rue des Saints-Pères. There were several prominent officials from the State Department who were former Nobles who escaped France at the beginning of the French Revolution some 25 years ago. These former nobles remembered Sulpice Debauve & Auguste Gallais and the pistoles they created for Queen Marie Antoinette. Out of custom, Sulpice Debauve decided to create a new delicacy and, this time, dedicate it to the Holy Father Pierre. The bonbon, which had an almond and nut praline filling, was christened Saint-Pierre, and was displayed for the first time on Christmas of 1826. Originally Rue des Saints-Pères was named Rue de Saint Pierre, but was later changed, which is why Debauve & Gallais also changed the name of the bonbon to Saint-Peres.
