Debauve & Gallais, unlike most other chocolate manufacturers, has maintained a tradition of making chocolates that are very low in sugar, relying instead on high percentages of the finest quality cocoa available. We also take great pride in our superior ingredients and refusal to sacrifice product quality to expansion and profits.

Debauve & Gallais uses only the choicest and most flavorful cocoa beans, Piedmont hazelnuts, Perigord nuts, Turkish raisins, Spanish almonds, Turin chestnuts, and Antilles rum, and other prize ingredients. No dyes, preservatives or other additives are permitted.

The chocolates are made by hand in small batches by expert artisans in France. Each decision regarding preservation and refinement of production techniques, recipes, and equipment is made with careful consideration of the company's tradition of excellence and the needs of our loyal customers.

The care and seriousness that go into production can be tasted in each extraordinary bite. Cocoa beans are roasted and crushed to retain their naturally buttery, but elegantly bittersweet nature. Almonds and hazelnuts are caramelized and crushed to crunchy perfection. Ganaches are smooth and velvety, and may be flavored with coffee, raspberry, orange blossom honey, blackcurrant, jasmine, earl grey tea, and other exquisite flavors.

Chocolates are moulded by hand into fleur de lys and other fanciful shapes. Images, ranging from Debauve & Gallais' coat of arms to a charming bee and honeycomb motif, are silkscreened using thin gold foil on select chocolates.

The final proof of Debauve & Gallais' excellence lies not in archives, history, medals and awards (of which there are many!), but simply in the taste!
